Me parece una feria extraordinaria porque est\u00e1 al aire libre, porque la gente puede pasear alrededor de los stands y tambi\u00e9n puede sentarse y escuchar a escritores que de otra manera no conocer\u00edan.<\/p>\n<p>Precisamente el libro <em>Cocina yucateca<\/em> tiene que ver con ello. Es un libro que yo hice durante la pandemia, porque tem\u00eda que las recetas de mi madre se perdieran. Le propuse escribirlas, mi mam\u00e1 tiene 84 a\u00f1os y ella afortunadamente acept\u00f3. Y lo que yo hice fue hacer cr\u00f3nicas alrededor de cada una de estos 32 platos, que son mis preferidos.<\/p>\n<p>Esas cr\u00f3nicas tienen que ver con la infancia, con la nostalgia, con el pasado y tambi\u00e9n un poco con el origen del plato. No es un libro acad\u00e9mico, es un libro de cocina, pero que est\u00e1 acompa\u00f1ado de estas cr\u00f3nicas, que son muy sabrosas, y la gente puede cocinar y leer la cr\u00f3nica o simplemente leer la cr\u00f3nica y luego irse a un restaurante a comer el plato.<\/p>\n<p>En mi casa, en mi familia, siempre han sido la madre, la abuela, la t\u00eda, las que han conservado esas recetas. Y bueno, eso no quiere decir&#8230; por ejemplo, mis hijos cocinan algunas de las recetas de su abuela, pero esto fue una manera de homenajear a esas manos femeninas que se han preocupado siempre por mantener a la familia unida a trav\u00e9s de la comida.<\/p>\n<p>[\u00bfTiene alg\u00fan plato favorito del libro?] S\u00ed, muchos, por supuesto. El queso relleno, que es un platillo que tiene reminiscencias espa\u00f1olas y mayas y bueno, tiene una combinaci\u00f3n. Es un queso holand\u00e9s que se rellena de carne de cerdo previamente cocinada y se sirve con una salsa que aqu\u00ed le llamamos col. Es un plato de muy complicada elaboraci\u00f3n, pero cuando se sabe hacer bien, es realmente un agasajo para el paladar. Este plato tiene que ver tambi\u00e9n con mi infancia, porque era mi favorito para mi cumplea\u00f1os y mi mam\u00e1 siempre lo preparaba. Le dec\u00eda: &#8220;Mam\u00e1, quiero el queso relleno&#8221;. Y ella consegu\u00eda esos quesos desde Chetumal, porque antes no se vend\u00edan en todo M\u00e9xico, solo se vend\u00edan en las zonas de aduana libre. Y como est\u00e1bamos cerca de Yucat\u00e1n, cerca del Quintana Roo, pues abundaban en la pen\u00ednsula.
