Update from the DR!

Yesterday Betsy and I had one of our most exciting seining trips yet. First we went out at high tide so we could just swim and enjoy the midday sun. While we were swimming we were surprised to see loads and loads of fish jumping happily out of the water all around us!
Well, as soon as the beach started to appear, we started dragging and pulled in 4 mullet on our first drag. As the tide backed off a little, and I say this without exaggeration of any sort, the mullet was in a frenzy there were so many of them! Each time we pulled the net through the water, there were probably on average 50 crazy fish jumping into the air like crazy. Our nets were full! The problem is that they were such jumping beans that they would jump right over the top of the net. We’d pull up on the beach and catch about 2-3 each time, but they taunted us because there were SO many of them in the water.
After about an hour of dragging and trying various methods to keep them in, we caught 16! Plus we caught a bagfull of shrimp. It was great. We were out there for 2.5 hours and went home with a bucket full of tasty delights.
Then we cleaned them out back and researched on the Internet for the best way to fix them up. We found plenty of recipes, many of them extolling the wonders of smoked mullet. So we went and got some hickory chips and smoked 4 of them up today on our grill, just to try it out. It smelled so yummy for about 2 hours.
We ate them just now and I think they were my favorite tasting fish yet. The natural taste of the mullet, the sparse seasoning and the hickory smoked flavor was a great combo. Betsy and I were both surprised that we got it right on the first attempt at smoking.
